Pumpkin Breakfast Cookies
Let’s just decide here and now that it’s okay to have cookies for breakfast. Mmmmkay? Just as long as they are these homemade Pumpkin Breakfast Cookies!!
These cookies are so soft and delicious! You will start with the base and then choose your add-ins. So yes, you get to CUSTOMIZE this cookie however you want. Or however your kids want! Trust me they will gobble these up and never even realize they are packed with goodness. The whole family will LOVE these cookies!
INGREDIENTS
- 1/4 cup maple syrup
- 1 egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- 2 tsp pumpkin pie spice
(or a little more if you like it a little more spicy) - Dash of salt
- 1/2 cup almond butter
- 1/2 cup pumpkin puree
- optional – scoop of collagen or protein powder
DIRECTIONS
- Combine all ingredients in a bowl
- Use a cookie scoop or drop by tablespoons onto a cookie sheet line with parchment paper
- Bake at 350° for 12-15 minutes (12 minutes for a softer cookie; 15+ for a little more crispy)
- This recipe makes about 12 cookies
Now here’s the fun part, the add-in’s! Start with the above ingredients as your base. Then get crazy with your add-in’s. You can’t go wrong with chopped apples or raisins. Raw pumpkin seeds, shredded coconut, sunflower seeds, chia seeds, shredded carrots, dried cherries, the possibilities are endless! You could even add chocolate chips (to keep it dairy free we use Enjoy Life non dairy mini chips) and your kiddos will think they are having a treat for breakfast!
