3 Ingredient Easy Breakfast Hash
There are a few meals around here that are our “go to’s” and this is close to the top of the list. 3 ingredients and simple enough to double or triple for meal prep! Not only is this meal a great breakfast, but it can serve as lunch, dinner, or a serious snack!
INGREDIENTS
- 2-3 medium sweet potatoes
- 1 bell pepper (your choice red, green, yellow, orange!)
- breakfast sausage or protein of choice (try using my chicken apple breakfast sausage; just don’t make it into patties, leave it ground up!)
DIRECTIONS
- Cook your breakfast sausage, or protein of choice, as directed. Set aside.
- Dice the sweet potatoes (tip: microwave them for 2-3 minutes to soften)
- Add the diced sweet potatoes to a skillet with cooking fat of choice (coconut oil or avocado oil works well)
- Sauté potatoes until the they begin to crisp
- Dice and add the bell pepper; sauté for another 3-4 minutes until the peppers begin to soften
- Add cooked sausage
- Season to taste (salt, pepper, paprika, garlic, sage; endless possibilities)
This should make 3-4 servings. Separate the hash evenly into containers and breakfast is served! For additional protein, throw an egg on top. Trust me, it’s delish!
